I thought I’d start off the new year by challenging myself a bit. Today I’m tackling choux pastry, something that up until now, I was too intimidated to try. Using Thomas Keller’s recipe from The French Laundry Cookbook, I was able to create some lovely cheesy puffs! It was actually super easy.
