I can’t believe I actually made croissants… good ones!
Of all the challenges so far, this was the one I was dreading the most. When Stevie chose croissants, I was super excited, but I was also afraid that the recipe would be way over my head. It just goes to show you, that we don’t often give ourselves the credit we deserve. That’s the great thing about these challenges: proving to yourself that you are even more fabulous than you originally thought! As if the tiara I wear to bed wasn’t already tight LOL.
Surprisingly, I have enjoyed this challenge more than any of the ones I’ve done so far. Yes, croissants are an all day project, but really, that’s no different than any good loaf of bread. While you are waiting for your dough to rise and rest, there is no reason to hang around and watch the clock. You can go about your errands, go shopping, or even go to the gym (in anticipation of buttah fat overload). If you take longer than the alotted two hours for the dough’s resting period, well, to be honest, it really doesn’t matter. The croissants aren’t going anywhere till you bake them. I can tell you for a fact (because I let mine sit a loooong time), that dough isn’t going to explode in your refrigerator or anything

I love making bread on a day when I know I’m not going to be doing much, and now, I’m going to love making croissants. There was an extreme sense of smugness that came over me when I realised, “hey, these really do look like croissants!” and that smugness turned into a feeling of superiority when I took my little babies out of the oven! Who knew that Moi could make such plump and flaky pastries all by myself!? Not I! Now my head is just swimming with ideas for loads of different flavours I want to try making, so watch this space!

He holds a dark secret, you know! You must watch this informative video, it is quite an exposé!!! Perhaps now you will stop buying your croissants in a tube and start making your own now, no? If you think store bought croissants are a bit sh*t, you might not be that off the mark.

I am sitting exactly where you were – “i cannot…possibly…accomplish…without…so many failures and so much frustration… do I want to go through all of that?” The answer now – is “Yes! I will, thanks to HH my cyber mentor and cheerleader – my YES YOU CAN principessa!

I am so happy for you! I canned some apricots in thyme this year – will post soon – and I want to make a frangipan tart with homemade puffed pastry topped with my apricots – and now…I will actually try!

I made croissants yesterday for the first time for Tuesday’s post. Yours look gorgeous! You’re right, it’s not as scary and I thought.
Ok. Officially impressed- and inspired. The only problem being, I think if I nailed croissants, my rationale for why we should go back to Paris ASAP might be shot in the foot a bit.
