Today, along with this super yummy recipe, I’d like to share one of my top tips on cookie baking.
If you are anything like me, having all of those delicious hot cookies coming out of the oven is too irresistible a temptation to turn your back on. I end up having a bit of a piggy frenzy. Hubby comes home, and there I am on the floor, rolling around in agony with my hands clutching my belly pot and chocolate crumbs littering the corners of my mouth. “What happened?” he asks. “Nothing…” I answer, as I turn my guilty face away. “Nope, nothing at all daaaaahling, it’s just another day in the life of your beloved housewife, working hard for your money.” Mr P shakes his head and helps me off my back and he tries to snap me out of my sugar coma. What can I tell you my dears, for some people it’s drugs, for some it’s alcohol, and for me it is most definitely sugar.
Okay, so want to know how I’ve learned to avoid that ugly scene? Make your cookie dough. Shape them as you would, and then freeze them on a flat surface. Once frozen, place the cookies in a zip lock baggie, and there you have it, fresh cookies ready to be baked and eaten at a moments notice. So not only will you have fresh cookies on tap, but you only have to bake a few at a time, rather than a couple of dozen. Plus, as an added bonus, you will totally look like the hostess with the mostest when guests come over and you can make fresh from the oven cookies without any mess or fuss.
The following recipe is copied and pasted from Real Simple
Peanut Butter Cup Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 3/4 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large eggs
- 1 teaspoon pure vanilla extract
- 1 12-ounce package small peanut butter cups, coarsely chopped
Directions:
Heat oven to 375° F. Line 2 baking sheets with parchment paper. In a large bowl, whisk together the flour, baking soda, and salt.
Using an electric mixer, beat the butter and sugars until creamy. Add the egg and vanilla and beat to combine. Gradually add the flour mixture, mixing until just incorporated. Fold in the peanut butter cups.
Drop tablespoon-size mounds of dough 2 inches apart onto the prepared baking sheets. Bake until light brown around the edges, 12 to 15 minutes. Transfer to a baking rack to cool.
The above recipe makes 48 small cookies.



I have tried every trick in the book to not eat half the cookies or a cake as soon as they/it comes fresh out of the oven. To no avail. Discipline utterly fails me when faced with sweets. I’m afraid I would just bake all the frozen cookies at once and gobble them up (with the help of my husband, of course).

Try Pangiasus–it’s a Japenese catfish and what I use to make my fish tacos. Tastes just like a less flaky cod or Pollock and is super cheap– $3 a pound! It’s a clean white fish–not a bottom feeder!
Dahling HH – Currently temptation is the devil! But your cookies here are dancing in front of my eyes and beckoning me to failure, you oh so eveil one ….lol…The darling reeses peeking out of each one of them is just too much to resist.

Now to tell you the truth, as much as I adore chocolate and peanut butter, I am not a fan of Reeses Peanut Butter Cups. But in cookie form? I’ll let you bake these for me and I’ll rave, dahling!

Oh my oh my oh my oh my. Is this a treat or what? I looove reese’s peanut butter cups. I don’t understand why a lot of my friends don’t like it. I definitely want to make these. Looks so delicious and is simply pure indulgence. I can just see myself rolling on the floor on a sugar high too haha.
