I am on a mission to clear out my freezer. I just happen to have 4 very old and ugly bananas in there that were crying out for some love and attention, hence, these banana muffins with a crunchy cinnamon sugar topping were born. I have to say, I really liked these. They were nice and moist even after a couple of days, and the cinnamon sugar crunch on the top was a delight!
Here’s something you probably didn’t know: while we humans typically open out bananas from the stalky bit, monkeys pinch the bottom ends of the banana to open it. Click here for a demonstration. Try this next time you have trouble peeling a banana, it’s pretty cool. Another banana fact? Bananas are actually considered berries! They are the largest berries known to man, and they are America’s number one consumed fruit.
So go on daaahlings, make like a monkey and peel it like it’s hot!!!
Cinnamon Crunch Banana Muffins adapted from Orangette
- 1 ½ cups all-purpose flour
- 1 cup sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 bananas, mashed
- 2 large eggs
- 6 tablespoons of vegetable oil
- 1/4 cup of honey
- 1/4 cup of water
For topping:
- 2 tablespoons of sugar
- 1 teaspoon ground cinnamon
- 2 1/2 tablespoons of packed dark brown sugar
Preheat the oven to 350° F.
In a medium bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt. In a large bowl, whisk together the banana, eggs, oil, honey, and water. Add the dry ingredients to the wet ingredients, and stir well.
In a separate bowl, combine the topping ingredients.
Distribute batter into a cupcake tray lined with cupcake liners. Fill them about two thirds full, and sprinkle over the topping mixture.
Bake until a tester inserted into its center comes out clean, about 30 minutes. Leave to cool.
Yield: about 12 cupcake sized muffins

The thing I love about these muffins is the crunch topping, and then of course, this is a wonderful way to get rid of those pesky over-ripe bananas.
These muffins are such a great colour and I love the flavour combination – seriously though, I didn’t know you could freeze bananas?! I must try that sometime…!
Even with a muffin recipe, which looks great by the way, you still give us great info. Just the kind of useless tidbits…that might come in handy someday!

Ha! Too funny. Just this past weekend I showed my parents how monkeys open bananas! Enlightening to say the least. I’ve got some old bananas hanging around and this recipe sounds fabulous…..
While the muffins look divine it is that crunchy cinnamon topping I am after, proper muffin toppings are elusive to me but you’ve really hit on something here. I suppose this means I’ll have to dig out my own nasty bananas from the bag of the freezer..
