Beans, beans, the magical fruit…
It is always a good thing to have a few vegetarian recipes up your sleeve. Here is one that I am definitely going to be adding to my repertoire. I love the little zing of orange here, it really adds something special to something which might otherwise be a bit ordinary. Best of all, at around 400 calories per serving (based on a 4 servings without adding sour cream or yogurt), this cheap and cheerful dish is super easy to prepare, hearty, and delicious. You definitely won’t feel like your are missing out. BUT, be warned my pretties, don’t eat this right before a romantic evening. For it seems that the old ditty is true: “beans, beans, the magical fruit. The more you eat, the more you toot!” … not that Moi ever breaks wind of course…
Do make this delicious black bean chili and you will be a svelte supermodel in no time, a silent but deadly supermodel. Nobody will hear you as you stalk your man candy in your Louboutins now, but they might be able to smell you. Okay, seriously, its not that bad LOL. I’m just teasing you… kind of.
Vegetarian Black Bean Chili with Orange and Cumin from Bon Appetit
Ingredients:
- 2 oranges
- 2 tablespoons olive oil
- 2 cups chopped onions
- 4 garlic cloves, pressed
- 4 teaspoons chili powder
- 4 teaspoons ground cumin
- 2 teaspoons ground cinnamon
- 3 15.5-ounce cans seasoned black beans, drained
- 2 14.5-ounce cans diced tomatoes in juice
- Hot pepper sauce
- Sour cream or plain yogurt
- Chopped fresh cilantro
Grate enough orange peel to measure 1 1/2 teaspoons. Juice oranges. Heat oil in heavy large saucepan over medium-high heat. Add onions; sauté 5 minutes. Mix in garlic and spices. Add beans, tomatoes, and half of orange juice. Simmer over medium heat until heated through and flavors blend, stirring often, about 15 minutes. Mix in orange peel and remaining orange juice. Season to taste with hot sauce, salt, and pepper. Ladle chili into bowls. Top with sour cream and cilantro. Pass extra hot sauce alongside.


I’m loving the fresh orange in this. Chili is a hearty, stick-to-your-ribs dish. So, to have a bit of bright citrus in it is a very nice touch.
Orange and cumin…what a rad combination! Despite the lack of meat, it sounds like an utterly savory and flavorful chili!
There is no way I could eat that! Just thinking about chili makes me sweat! Still, it looks like a lovely combination – Maybe I’ll try to make a chili-less chili

When I made my Brazilian black bean and meat stew (feijoada) they serve it with orange and kale…interesting!
