Strawberry cheesecake in a glass
Recently I was contacted by someone at Total Greek Yogurt to ask me if I wanted to try out some of the different Greek yogurts in their range. I said yes. They couldn’t have asked a better spokesperson than me, because I go through the stuff like nobody’s business. Greek yogurt is an absolute staple in my house, something you will always find in my refrigerator. I use Greek yogurt for a billion and one things. The versatility of this food is pretty amazing if you ask me. I use it for sweets (as in this case), I use it in curries, I use it as a base for dips, and I also use it as a low calorie substitute for mayonnaise. Greek yogurt has many health benefits and is an excellent source of dairy. It also happens to taste incredible. If you haven’t tried Greek yogurt, I’d say it’s a bit like sour cream in flavour. I have always bought the full fat version, but the people at Total sent me all the different products in their range. The 0% yogurt tasted better than I expected. It doesn’t have the same creamy texture as the full fat version, but for this particular desert, it worked beautifully. Honestly, this didn’t taste like a low calorie desert at all. I even managed to fool Mr P
.
If you are a bit of a dumb (but very cute) bunny, like myself, this recipe is for you. It is completely fool proof daaaaahlings, so quick to put together. No baking involved. Despite the ease of the desert, it is still impressive enough to wow your loved ones. And it’s good enough to make your friends hate you for eating yummy food but having skinny thighs (though personally, I haven’t reached the skinny thigh chapter in my life yet).
The recipe for this desert, and the deserts that follow, are based on this one from the BBC Good Food website. The recipe makes three portions.
Strawberry Cheesecakes in a Glass
Ingredients:
- 85g low-fat biscuits– I used speculaas
- 200g tub extra-light soft cheese
- 200g tub 0% fat Greek yogurt– I used Total
- few drops vanilla extract
- 2 tbsp good-quality strawberry jam
- 100g strawberries, hulled and sliced
Crush biscuits and place crumbs in the bottom of three glasses or small bowls. Combine the yogurt, cream cheese, and vanilla together, and spoon over the crumbs. Refrigerate. When ready to serve, stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.
Here’s another version where instead of vanilla, I added 1/2 teaspoon of cinnamon into the cream cheese and yogurt mix, and then topped it off with some of my chai spiced applesauce:
And this was my favorite of the three. Here I took inspiration from one of my favorite treats, baklava. There is 1/2 teaspoon of cardamom in the cream cheese and yogurt mix, and I topped it off with honey and pistachios.
