I have a couple of beautiful apple trees in my back yard. They were a key factor in buying the house I now live in. They bring me so much happiness. I love to see the little flowers blooming on them in the spring, and I love it even more when the little apples start growing in. Best of all is when I get to pick the apples though. My apple trees are one of my life’s simple pleasures. Just knowing that they are outside in my garden makes me happy. The apples that grow on the trees, however, are not the most beautiful apples in the world. I don’t think any supermarket would have them. Most of them have little blemishes on them, and not all of them come in the “perfect” apple shape, but that’s what real organic food looks like I guess. The biggest and best of my trees produces cooking apples. It is quite mature and gives a lot of fruit… much more than I would ever know what to do with, that’s for sure– please email me any suggestions or recipes. Mr P doesn’t eat apples (unless they are in a pie), and a girl can only eat so much fruit. Applesauce, however, seems to be the recipe that uses the most apples, so that’s what I’ve decided to make. I’ve tried to be a bit creative in my choice of flavour by using spices that I associated with one of my favorite drinks: Indain chai. It came out pretty awesome if I do say so myself

Heavenly Housewife’s Chai Spiced Apple Sauce
Ingredients:
- 4 pounds of apples that have been peeled, cored and diced
- juice of one lemon
- 1/4 cup dark brown sugar (packed)
- 1/4 cup white sugar
- 1 1/4 cup of hot strongly brewed tea
- 1/2 teaspoon of salt
- 1 teaspoon of cardamom
- 1 teaspoon of cinnamon
- 1/4 teaspoon ground clove
Put all the ingredients into a large pot and bring to a boil. Once boiling, bring to a simmer and cook until all the apple pieces are broken down. Once it is mostly cooked, you can use a potato masher to speed the process up a bit. Or, if you like it a little chunky, that’s fine too.
Apple sauce will last up to a year if packed in the freezer.

Having a generous fruit tree is indeed one of the simple pleasures of life. This is an interesting spin on applesauce. These sweet spices go together so well, and the tea probably adds a nice contrast to that fruity sweetness.

You are lucky to have your own apples it brings not only pleasure but a good away to keep doctors away! We don’t need our garden fruits to be picture perfect but if it perfect the picture of our life then the purpose is totally served!

Did you see my post on apple pressing? and making our own juice? I don’t think you did – come to think of it. Maybe you did – but look at it, if not. There was another I read about making her own pectin. That was wild, too. I love this idea. It lends itself perfectly to these flavours… and I might incorporate that idea into a canned apple butter recipe. Wouldn’t that be great: Chai Apple Butter?
