English Breakfast Date Cake for Father’s Day

How does he do it?

Growing up, I was always told that I looked like my dad. That used to upset me. I was a little girl, and I thought people were trying to tell me that I looked like a boy, or worse, that I was hairy. I’ve grew up pretty self conscious of my very unfortunate uni-brow.  It didn’t help when one day I came out of the bath and my mom started playing with my eyebrow(s) and called me “Oscar.” Actually, it was positively traumatic… thanks mom. My dad has many wonderful qualities, and many things which I would have loved to inherit. My dad is super slim… how come I didn’t get that? My dad has a lot of “get up and go”– while I break out in a sweat just thinking about any household chores.  My dad speaks three languages, all I know is “Gateaux, s’il vous plaît” (which is then followed with a snap of the fingers and an imperious glare). My dad is a master at rolling with life’s punches and has overcome so many obstacles, and I am a whiner extraordinaire. Aside from the uni-brow,  I am pretty sure that my love of cooking and baking comes from my dad. He has a passion for food, and like me, adores baking. I am very thankful for that. Most of all I am thankful for a dad who always lets me know that he loves me and how important I am to him.

Today’s post is dedicated to my dad and all the other wonderful daddies out there. We are so lucky to have you! Happy Father’s Day!!!

English Breakfast tea and date cake

I had some dates that have been sitting around for ages. They were looking a bit sad and dry, like shrivelled old ladies. Then I found this recipe and voila! By soaking the dates in the heavily brewed tea for 8 hours, they became all juicy and plump and were given a  new lease on life–well, that was until it was gobbled.  This was a wonderful recipe, another keeper. It made for a very indulgent breakfast toast. For my dad, who loves dates, I thought this would make for a nice addition to a Father’s Day breakfast.

English Breakfast Date Cake

Ingredients:

  • 3 tbs English breakfast tea leaves
  • 250g Trident pitted dates, roughly chopped
  • 1 3/4 cups (265g) self-raising flour
  • 1/4 cup (40g) plain flour
  • 3/4 cup (155g) brown sugar
  • 1 teaspoon of cinnamon (my addition)
  • 125g butter, melted
  • 2 eggs, lightly whisked
  • Butter, to serve

Preheat the oven to 160C. Grease a 9×5 inch loaf tin.

Combine the tea leaves with the  1 1/3 cups (330ml) water in a sauce pan and bring to a boil.  Then reduce the heat, and allow to simmer for 1-2 minutes. Strain the tea leaves, and discard, being sure to squeeze all the liquid from the leaves. Cover chopped dates with the liquid from the tea, and allow it tool. This mixture should ideally be set aside overnight.

Sift the flours together, add in the sugar, and then the date mixture and the eggs. Stir until just combined.

Spoon into a greased pan and bake for 55-60 minutes or until a skewer inserted comes out clean. Set aside to cool.

…and don’t forget my dears, a little buttah makes it bettah!

Aww what a nice post! Everyone said I looked like my father and brother and that was always weird to me too! We have the same facial features and the same eyebrows. I was also blessed with a very thick set that I have to keep under control on a weekly basis! love it!
