Let me just say right now, that this chicken salad is awesome. This is most definitely going to become a staple around here. I based this sweet and spicy chicken salad on an Ina Garten recipe I found, but I made it a lot healthier. Believe me, I’m am no health nut, but I do have to watch myself. It is an unfortunate fact that I only have to breathe in the luscious scent of donut, and the poundage inevitably piles on. It’s just not fair! As far as this chicken salad is concerned, don’t let the word “healthy” scare you. This recipe is easy to make, full of strong delicious flavours, and the taste is sensational. It in no way resembles diet food, Housewife’s word of honour.
I can’t tell you how much I adore the Barefoot Contessa. The thing is, if I ate her her food regularly, I would turn into a prize winning heifer in no time. You see, inside me lives a 600 pound woman that is just dying to get out. She is always whispering naughty things to me about cake and making me look at restaurant menus on the internet all the time. So much so that sometimes I feel like a gross old guy looking for porn (just for me it is food porn).
I’ve used this batch of chicken salad to make sandwiches, but I’ve also bought some nice wraps that I’m going to make for Hubby’s lunch tomorrow (he won’t take sandwiches to work, he says they get soggy). As you can see, I ate mine on a plain toasted bagel, but I think a raisin bagel would be even more fabulous.
Curried Chicken Salad
Ingredients:
- 500g cooked chicken breast (or left over chicken) cut into cubes
- 150g full-fat Greek yogurt
- 70g mango chutney, or another fruit-based chutney
- 1 tablespoon of mild curry powder
- 2 stalks of diced celery
- 2 chopped spring onions (scallions)
- 40g raisins
- 40g salted cashews
- salt and pepper to taste
Combine the yogurt, chutney, curry powder, and 1/2 teaspoons salt in the bowl and mix until smooth. Add the chicken, celery, spring onions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.


There’s something kinda hypnotic about watching Ina cook and hearing her speak, isn’t there?? She’s corny as hell though, you’ve got to admit. Still, I’ve seen this chicken salad recipe of hers, and now that it’s HH approved (as good as a Zagat rating me thinks) I might just try it
