
I just love eggs. I love them scrambled nice and fluffy. I love them sunny side up. I love a fabulous omelet filled with delicious goodies. And I discovered that chocolate eggs aren’t so bad either. Here’s a little egg dish I whipped up for those of my friends who are celebrating Easter next weekend. It’s basically a chocolate and coconut macaroon (the other macaroon) with little white chocolate eggs. Darling, no? Really you could make these little macaroon nests and put any manner of treats in it, but the eggs look good.
Hey, so here’s a cool Easter fact. Did you know that the largest Easter egg evaaaa was made by the Belgian chocolate producer Guylian? That egg was made with 1950 kilos (or 4,920 pounds) of the good stuff and required a team of 26 men to make it. Ahhh… I can picture it in my head. I wonder if it was hollow. I’d like to put my mattress inside it and sleep in there. Talk about sweet dreams…

Macaroon Nests
2 room temperature egg whites
60 grams of melted chocolate
1/4 teaspoon salt
1 teaspoon vanilla
½ cup caster sugar
½ cup sweetened condensed milk
400 grams desiccated (dried) coconut
Chocolate eggs for filling (or some other goodies, maybe jelly beans)
Preheat oven to 150C/300F.
Beat your egg whites in a large bowl to a stiff peak. Next melt your chocolate. Add in all the ingredients except the coconut and fold through. Once all of your ingredients are incorporated, fold in the coconut.
Form into nest shapes. It doesn’t matter if they look a bit rough, nests aren’t perfect daaaahlings. Let’s call it “rustique.”
Place the nests on a cookie sheet lined with parchment paper and bake for roughly 15 -20 minutes . Leave them to sit on the tray and cool for a while before removing them from the paper. Once your nests are completely cooled, fill it with as many goodies as you can fit.
