Baking Blunders and Truffles


I like to post a recipe here at least once a week. Lately though, I haven’t been all that successful. On Monday I tried making flapjacks (a sort of British granola bar), but when I cut them, they just fell apart. It’s supposed to be such an easy thing to make, but I made a real mess of it.
I’ve also been working on my entry for Mactweets. It hasn’t been going well. Since signing up for the challenge, I have made three further macaron attempts (which now makes a total of six tries at making macarons). The first time came out pretty good, but I think they were slightly overcooked, and not good enough for my entry. You see, the delicate little shells were supposed to be a lovely lavender, but mine got a bit brownish (should I have entered those and called them “Macarons a la St Tropez” perhaps?). The second batch was an absolute failure. I only got two macarons off the paper. That day I got so frustrated because I really thought I was going to get it right. I tried again on Tuesday, and again, the macarons were too brown. At one point I was almost on the verge of tears. I was just so frustrated. Do you ever get like that over silly things? Well, I called Mr P (while he was working of course LOL), and he cheered me up. He is a dolly. I guess you guys are wondering why I still keep trying. It has become kind of important to me that I make a success of this. After taking the macaron class, and after all my previous efforts, how can I give up now? I can’t. Even if I don’t have an entry for the whole Mactweets thing, I am going to continue trying. Do you have something similar? Something you keep trying at but never seem to succeed?
Well, as I haven’t made anything worthy of sharing with you guys this week, I am going to repost a recipe that I don’t think a lot of you got to see before: Date, Pistachio and Coconut Truffles. This was actually my first ever recipe post on this website, and it happens to be a really good one. I am happy to say, after all my recent baking mishaps, that absolutely no baking is involved :D . Yes, no housewives were harmed in the making of these. Not only are these truffles healthy, but they happen to be absolutely delicious. As they sit, the flavours intensify and it becomes even more yummy. I hope you try it.


Date, Pistachio and Coconut Truffles

Ingredients:
250g unsalted pistachios
250g dates, seed removed
1-2 tablespoons of orange flower water
1-2 teaspoons of ground cinnamon
1 tablespoon of honey
200g desiccated coconut
15-20 petit four cases (optional)

Grind the pistachios in the food processor. Once ground, add in the dates. Continue grinding until it forms a paste. Mix in the orange flower water, cinnamon, and honey.

Roll mixture into 15-20 truffles and then roll them in the desiccated coconut until they are fully coated. Place each truffle into a mini paper case.

Store in the refrigerator, but serve at room temperature.
