HH Goes to Cupcake School

Recently I took a class at The Make Lounge to learn how to decorate cupcakes. You see a while back–maybe a year ago, Moi decided she would become cupcake maker extrordinare. That never happened, although I did buy lots of disposable piping bags and the little nozzles that go along with them. Then I decided I would become the expert at making the French macaroon. That didn’t happen either (as you well know, but watch this space).

A couple of weeks ago, I had the opportunity to take a cupcake decorating class at the Make Lounge in London. I am so glad I did. It was one of the most fun classes I’ve taken so far, and quite inexpensive too. The class was taught by Leigh, a pastry chef at the famed restaurant, Sketch. I’ve got to go there one day. I hear it’s quite the celebrity hang-out, so naturally they must be waiting for me to show up.

Leigh was a great teacher. She pre baked all the cupcakes and brought them into class for us to work on. She taught us how to make swiss meringue butter cream (yum!) and then we practiced working with the piping bag. This is something that involves quite a bit of practice. I don’t feel that it’s something I’ve mastered, but I do think I’ve gotten better since the class and picked up some cool techniques along the way. In addition, we learned how to make cute little edible “cupcake confetti” out of marzipan (or almond paste) which we coloured with food dye. I also discovered the joys of edible glitter (no, get your mind out of the gutter you naughty creature). It was messy work, but super fun. We each took home the six cupcakes which we decorated in class.

If you are in the London area, try this class. I totally recommend it. They fill up quickly, but as it is a popular choice, they keep adding new cupcake classes to their schedule.
