Pear Bread


I am feeling kind of blah today. I’m just kind of bored and don’t really have too much energy. Maybe it has something to do with the grey and drizzly days we’ve been having here in England, or perhaps its because its been about two weeks since my last fix of pistachio macaroons. Hubby is out all day, so I have nobody to play with. He is doing some work in the morning and visiting his cousin in the evening. What’s a girl to do? Well, I am sure that you can guess that its got something to do with food. Surprise, surprise, just look at my thighs LOL. Check out the rhyming housewife! Just give me a spray tan and I am about ready to bounce around the house like a demented Oompa Loompa.

But no, I am expecting a call from my mother, so I got to stay awake. Besides, there is a goodie baking in the oven. I found an awesome baking website called Bake or Break, which is all about baking delicious sugary and carb loaded treats. You may want to check it out. On it I found a nice looking recipe for Pear Bread (yes, its really a cake, baked in a loaf tin). You may be seeing a lot of these loaf cakes on my blog because I recently purchased the newest issue of Martha Stewart Living when I went to Costco yesterday, and its got loads of the things! Woo hoo! Can’t wait to get started.

I’ll tell you one thing, I was sampling the batter before pouring it into the tins, and it sure tasted good. Oh, come on, like you never do that!

The following recipe makes two loaves. I am going to send one along with Hubby when he goes to visit his cousin in the evening. Need to earn some brownie points ;) .

Pear Bread

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup chopped pecans
  • 3/4 cup butter or vegetable oil
  • 3 eggs, lightly beaten
  • 2 cups granulated sugar
  • 2 cups peeled and finely grated ripe, firm pears
  • 2 teaspoons vanilla extract

Preheat oven to 350°. Lightly grease and flour a 10-inch tube pan or two 9″x 5″loaf pans.

Combine flour, baking soda, baking powder, salt, and cinnamon. Scoop out about 1/4 cup of this mixture and combine it with nuts to coat. Stir back into the flour mixture.

In a separate bowl, combine butter, eggs, sugar, pears, and vanilla. Add the pear mixture to the flour mixture, stirring just until flour disappears and batter is evenly moistened.

Pour batter into prepared pan(s). Bake for 60-70 minutes, or until bread is browned and firm on top. A pick inserted into the center should come out clean.

Cool in pan on a wire rack for 10 minutes. Then, remove from pan and place top side up on a plate or wire rack to cool completely.
