Coconut Flan at Paul

One of the things which I love to get my greedy little hands on when I come to London is Paul’s coconut flan (actually, they call it flan à la noix de coco, but I don’t really know how to say that *wink*). Paul is a wonderful world-wide French bakery chain– though they don’t have one in my neck of the back woods! They do great baguettes, pastries, sandwiches, and some of them even do hot breakfasts. What’s really cool is that if I take the train to London’s Euston station, they have a little Paul store right there. How excellent is that for a “welcome to London”? Only, here’s the thing, they rotate their many delicious cakes and treats, and that means that my beautiful flan that I crave isn’t always there. Yes, there are loads of other nice treats, but my pea brain is very single-minded, and when I don’t get what I want I become a very cranky housewife indeed.

Paul’s coconut flan is actually baked into a pastry case. It is cut like a cake, or a pie (and they give you a nice fat slice by the way). Its texture is creamy, but its not as dense as a Spanish type of flan. Maybe the coconut changes the texture and makes it kind of fluffy–I don’t really know.

I tried to get a close-up to show you the texture, but unfortunately, iphones don’t have the greatest camera (though they are perfect in every other sense):

As you might have figured out, I am constantly inspired by the foods I eat when I go out. If I love something, I always want to be able to make it myself. Can anybody out there help me out with this one? Got any recipes like this? This is something I would LOVE to have in my repertoire of Heavenly Housewife’s culinary delectables!

No matter what country you are reading this from, check out Paul’s website, they may have one near you. Its fairly priced and totally delicious. Its something not to be missed :) . Don’t get hooked on the coconut flan though, that’s mine, and I am not a happy bunny when they are sold out.
