Banana Bread

One thing my dad taught me, growing up, is that when you go to someone’s house, you should never go empty handed. Well today we are going to my favorite of my husband’s auntys. She is a great lady, but very hard to cook for. For one thing, she is a vegetarian, second she doesn’t like cheese, and third she doesn’t usually like things that are too sweet. I decided on banana bread. I found this recipe on Martha Stewart’s website. If you haven’t figured it out yet, I think Martha is the shiz!!! This recipe got great reviews on her site. I have still yet to be wronged by the infallible Martha. I actually made two loaves. One for Aunty and one for me (Hubby doesn’t like bananas)–mine, of course, is the one that gets cut up for the sake of you guys so I can take pictures :P . I make the most horrible martyr don’t I?
Here is the recipe (copied and pasted from Martha’s site). It makes 1 loaf. I just want to mention that it says here that each banana bread takes about an hour and fifteen minutes. Mine actually finished at around 40! Wierd cause Martha is always so spot on. Just keep an eye on it. As soon as your tester comes out clean, you know its ready.

1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup granulated sugar
2 large eggs
1 1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans
  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  • In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
  • Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
